gooey, sweet hazelnut no-bake s’mores

These gooey, sweet no-bake s’mores require no heat at all. No oven, no stove, no microwave; you could make it anywhere!

In fact, it’s so easy that the measurements aren’t even important. Just keep in mind that marshmallow fluff oozes. More fluff = more luxurious marshmallow spillage.

If you happen to have a toaster available, you can brown the graham cracker beforehand to add a hint of toasty flavor to your s’mores. If you want to get really fancy, you can even add crushed hazelnuts. Ooh, la la!

At room temperature, these no-bake s’mores are gooey and chocolatey just like traditional s’mores. But unlike regular s’mores, they’re also good frozen! To freeze, place on waxed paper (making sure they’re not touching). They should be frozen within an hour or two.

This recipe makes 12 servings and is easy to scale up if you’re bringing them to a large gathering. Shave off some time by putting all the graham squares in a large pan; then apply the rest of the ingredients all at once. Serve by the square like bar cookies.

If you are serving them at a party, make sure to put a serving utensil out with them. They can be pretty sticky to pick up!

  • half a jar of chocolate hazelnut spread (6.5 oz)
  • one 7 oz jar of marshmallow creme
  • 7 large graham crackers
  • one 1.5 oz chocolate bar
  • half a jar of chocolate hazelnut spread (185g)
  • 200g marshmallow creme
  • 7 large graham crackers (185g)
  • one 45g chocolate bar

1. Set one of the graham crackers aside for later, then break the other 6 in half so that you have 12 squares.

2. Spread each square with about two tablespoons of marshmallow fluff.

3. Next, add one tablespoon of chocolate hazelnut spread on top of the marshmallow fluff.

4. Roughly chop the chocolate bar and graham cracker into half-inch chunks.

5. Top s’mores with the chopped graham cracker and chocolate.

graham crackers: this article explains what they are and this is what the packaging looks like. There’s nothing quite like the real thing. But based on my research, I think digestive biscuits or Speculoos would be the best substitute.

marshmallow creme: this creme is fluffy, sticky, and deliciously sweet. It’s usually referred to as “Marshmallow Fluff,” even when it’s a different brand. If you can’t find a jar, you can follow this recipe to make your own. Creating your own marshmallow creme would definitely raise the complexity of this recipe, though!
